D.a.T. Roasted Chicken
D.a.T. Roasted Chicken is healthy and delicious.
Ingredients:

- 1 (4-5 lb) whole roasting chicken
- 2 teaspoons unsalted butter, softened
- 1 /2 tsp minced fresh thyme
- 1 tsp paprika
- 1 tsp ground coriander
- 2 tsp extra-virgin olive oil
- 3/4 teaspoon salt
- 1/4 tsp black pepper
- 3 shallots, peeled and halved
- 3 fresh thyme sprigs
- 1 lemon, quartered
- 3 tablespoons of D.a.T. SaUcE
- 4 cloves garlic
- 1 large onion, quartered
Directions:
Preheat oven to 350 degrees.
Clean chicken. Remove giblets and neck from chicken. Starting at neck cavity, loosen skin from breasts and drumsticks by inserting fingers and gently pushing between skin and meat. Set aside.
Combine butter, thyme, paprika, coriander, olive oil, D.a.T. SaUcE, salt and pepper. Mix well. Rub under loose skin, over flesh, cover whole chicken. Tie ends of legs together with twine. Lift wing tips up and over back; tuck wings under chicken. Place chicken, breast side up on a rack, then place rack in a roasting pan. Place shallots, garlic, thyme sprigs, in cavity of chicken. Place onion on all sides of chicken in the pan.
Bake at 350 degrees for 45 minutes. Increase oven temperature to 450 (do not remove chicken) and back at 450 degrees for 15 minutes or until a thermometer inserted in leg registers 165 degrees. Remove chicken from pan, let stand 10 minutes.
